Serves 8 people


For the Meatballs

2 pounds ground pork
6 cloves garlic, minced
2 jalapeno chilies, seeded and minced
2 Tbsp fish sauce
2 Tbsp soy sauce
1 Tbsp ginger, minced
1 tsp 5 spice powder
3 Tbsp sugar
2 tsp salt
Zest and juice of 2 limes
1 Tbsp Siracha hot sauce
1 bunch cilantro, minced

For the Sauce

1 cup mayonnaise
2 limes, juiced
2 tsp sugar

For the Garnish

Sliced cucumbers, ¼” thick
Sliced carrots, 1/8” thick
Cilantro sprigs
Mint sprigs
Sliced jalapenos

For the Meatballs

Combine the ground pork with all of the ingredients.
Heat a sauté pan with 1 Tbsp vegetable oil, and sauté a small patty of the pork mixture.  Taste for seasoning.  It should be slightly spicy, slightly salty, barely sweet, and well seasoned. Adjust if necessary.
Heat a grill pan, and form the pork into flat meatball size patties. Grill, turning once, until cooked through and charred. Place each meatball patty on a slice of cucumber.  Tuck in a sprig of cilantro, mint, and carrot slice.  Top with a jalapeno slice and sauce.

For the Sauce

Combine all of the sauce ingredients, adding the salt and Siracha to taste.
