Barbecued Pork Spareribs

Serves 8 - 10

 
     
 

Ingredients

For the Rub
¼ cup coriander seed
1 ½ teaspoons kosher salt
2 teaspoons cracked black pepper
Olive oil to coat ribs

For the Sauce
¼ cup chopped green onions
½ cup chopped cilantro
1 tablespoon brown sugar
¼ cup ketchup
Juice and zest of 1 lime
Juice and zest of 1 orange
¼ cup molasses

Pork
5 pounds pork spareribs

Instructions

Preheat the oven to 250° and clean the grill.

Mix together all the ingredients for the rub except the oil.

Using your hands, massage each rack with the oil. Now coat them with the rub as thoroughly as possible. Place the racks on a sheet pan lined with parchment paper. Slow roast in oven for 2 hours.

While ribs are roasting, make the sauce by combining all the ingredients.

15 minutes before taking out of the oven, light the grill. Cook ribs on the grill for about 5 minutes on each side, then brush with sauce.* If you put the sauce on too soon, it will burn the sugars in the liquid, leaving a metallic flavor. Cook for about 5 more minutes on each side.
