Pepper-Crusted Ball Tips

Serves 8 - 10

 
     
 

Ingredients

3 pounds cleaned and filleted ball tips
3 tablespoons cracked black pepper
2 tablespoons fresh chopped thyme
2 tablespoons blanched sliced almonds, ground
1 tablespoon kosher salt

Instructions

Simply mix all the ingredients for the crust together. Rub over meat and grill for about 8 to 12 minutes, depending on the size of the cut. Serve with sliced heirloom tomatoes and macaroni and cheese.
